Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 4 tablespoons unsalted butter divided
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Juice of 1 lemon

Method
 

  1. Preheat your oven to 400°F.
  2. In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat.
  3. Add the minced garlic, thyme, rosemary, oregano, salt, and pepper to the skillet. Sauté for about 1 minute until fragrant.
  4. Add the chicken thighs to the skillet, cooking for 5-7 minutes on each side until browned.
  5. Remove the skillet from heat and squeeze the lemon juice over the chicken.
  6. Dot the remaining 2 tablespoons of butter on top of the chicken.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
