- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant, being careful not to burn them.
- Add the chopped bok choy to the skillet and stir-fry for 3-4 minutes until the greens are wilted and tender but still bright green.
- Pour in the soy sauce, rice vinegar, and sesame oil. Stir well to combine and cook for another 1-2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and transfer to a serving dish. Garnish with sesame seeds if desired.
