Ingredients
  

  • 2 tablespoons vegetable oil
  • 4 cups bok choy chopped (about 1 pound)
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish optional

Method
 

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant, being careful not to burn them.
  3. Add the chopped bok choy to the skillet and stir-fry for 3-4 minutes until the greens are wilted and tender but still bright green.
  4. Pour in the soy sauce, rice vinegar, and sesame oil. Stir well to combine and cook for another 1-2 minutes.
  5. Season with salt and pepper to taste.
  6. Remove from heat and transfer to a serving dish. Garnish with sesame seeds if desired.
