Ingredients
  

  • 1 1/2 pounds baby potatoes halved or quartered
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper sliced (any color)
  • 1 cup fresh spinach optional
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

Prepare the Potatoes:
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the baby potatoes and cook for about 10-12 minutes, stirring occasionally, until golden and crispy.
Add the Aromatics:
  1. Stir in the diced onions and minced garlic.
  2. Season with smoked paprika, Italian seasoning, salt, and black pepper, tossing well to coat.
Cook the Vegetables:
  1. Add the sliced bell peppers and sauté for 3-4 minutes until slightly tender.
  2. If using spinach, stir it in and let it wilt.
Garnish & Serve:
  1. Remove from heat and sprinkle with fresh parsley.
  2. Serve warm as a side dish or a light vegetarian meal.

Notes

  • For an extra crispy texture, roast the potatoes in the oven at 400°F (200°C) for 25-30 minutes instead of pan-frying.
  • Swap baby potatoes for sweet potatoes for a slightly sweeter and more nutritious version.
  • If you love cheese, sprinkle some parmesan or feta over the top before serving.
  • Serve with a squeeze of lemon juice for a refreshing citrusy twist.
