Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
Spread the coated potatoes in a single layer on the prepared baking sheet. Sprinkle the grated Parmesan cheese evenly over the top.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
Remove from the oven and garnish with fresh parsley before serving.
