Method
- Preheat oven to 375°F (190°C). Pat roast dry with paper towels.
- In a small bowl, mix olive oil, garlic, rosemary, salt, pepper, and onion powder.
- Rub mixture all over the beef roast.
- Place roast on a rack in a roasting pan. Optionally add beef broth to the bottom.
- Roast uncovered for 1 to 1 1/4 hours (or until internal temp reaches 135°F for medium rare).
- Remove from oven and tent with foil. Let rest for 10–15 minutes before slicing.
Notes
- Use a meat thermometer for perfect doneness.
- Let the roast rest to retain juices before slicing.
- Serve with mashed potatoes, roasted veggies, or horseradish sauce.
