Ingredients
  

  • 3 –4 lb beef roast top round or sirloin
  • 3 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped (or 2 tsp dried)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 teaspoon onion powder
  • Optional: 1/2 cup beef broth for roasting

Method
 

  1. Preheat oven to 375°F (190°C). Pat roast dry with paper towels.
  2. In a small bowl, mix olive oil, garlic, rosemary, salt, pepper, and onion powder.
  3. Rub mixture all over the beef roast.
  4. Place roast on a rack in a roasting pan. Optionally add beef broth to the bottom.
  5. Roast uncovered for 1 to 1 1/4 hours (or until internal temp reaches 135°F for medium rare).
  6. Remove from oven and tent with foil. Let rest for 10–15 minutes before slicing.

Notes

  • Use a meat thermometer for perfect doneness.
  • Let the roast rest to retain juices before slicing.
  • Serve with mashed potatoes, roasted veggies, or horseradish sauce.
