Ingredients
  

For the Brownie Layer:
  • Strawberry cake mix
  • Egg
  • Salted butter melted
  • Heavy cream or whole milk/half and half
  • White chocolate chips optional
For the Frosting Layer:
  • Cream cheese softened
  • Powdered sugar
  • Sour cream or plain Greek yogurt
  • Vanilla extract
  • Whipped topping
For the Topping:
  • Vanilla sandwich cookies crushed
  • Strawberry syrup

Method
 

  1. Prepare the Brownies – Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. Mix strawberry cake mix, egg, melted butter, and heavy cream until smooth. Fold in white chocolate chips, then spread batter evenly in the pan.
  2. Bake – Bake for 20–25 minutes or until set. Let cool completely before frosting.
  3. Make the Frosting – Beat cream cheese, powdered sugar, sour cream, and vanilla extract until smooth. Fold in whipped topping for a fluffy texture.
  4. Assemble – Spread frosting over the cooled brownie base.
  5. Prepare the Topping – Crush vanilla sandwich cookies and mix with strawberry syrup. Sprinkle evenly over the frosted brownies.
  6. Chill & Serve – Refrigerate for at least 1 hour before slicing and serving.

Notes

  • For extra texture, use coarsely crushed cookies instead of fine crumbs.
  • Use full-fat cream cheese for a richer frosting.
  • Chill before slicing to ensure clean cuts.
  • Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
