  • 3 cups fresh cubed watermelon Opt for seedless watermelon for convenience.
  • 1 whole organic cucumber, peeled and chopped Choose English cucumbers for a milder taste.
  • 1 tablespoon freshly-squeezed lemon juice Fresh lime juice can serve as an alternative.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine 4 cups of filtered water, 1 cup of fresh mint leaves, and 1 cup of organic cane sugar. Bring to a boil, then reduce heat and simmer for 2-3 minutes until sugar dissolves. Let cool for 30 minutes and strain out mint leaves.
  2. Pour cooled mint syrup into a blender. Add 3 cups of fresh cubed watermelon, 1 peeled and chopped cucumber, and 1 tablespoon of freshly-squeezed lemon juice. Blend on medium-high speed for 2-3 minutes until smooth.
  3. Optionally, strain the blended juice through a fine-mesh strainer set over a pitcher for a smoother texture.
  4. Chill the juice in the refrigerator for 30 minutes or serve immediately over ice, garnishing with fresh basil or watermelon chunks.
