- In a medium saucepan, combine 4 cups of filtered water, 1 cup of fresh mint leaves, and 1 cup of organic cane sugar. Bring to a boil, then reduce heat and simmer for 2-3 minutes until sugar dissolves. Let cool for 30 minutes and strain out mint leaves.
- Pour cooled mint syrup into a blender. Add 3 cups of fresh cubed watermelon, 1 peeled and chopped cucumber, and 1 tablespoon of freshly-squeezed lemon juice. Blend on medium-high speed for 2-3 minutes until smooth.
- Optionally, strain the blended juice through a fine-mesh strainer set over a pitcher for a smoother texture.
- Chill the juice in the refrigerator for 30 minutes or serve immediately over ice, garnishing with fresh basil or watermelon chunks.
