  • 8 oz pasta choose your favorite shape like spaghetti or penne
For the Sauce
  • 2 tbsp olive oil for sautéing
  • 3 cloves garlic minced
  • 1 lb shrimp fresh or frozen
  • 4 cups spinach fresh
  • 1 cup diced tomatoes fresh or canned
For the Finish
  • 1/4 cup Parmesan cheese for garnish

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and toss with olive oil.
  2. Heat olive oil in a skillet. Sauté minced garlic until fragrant, about 30 seconds.
  3. Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque. Set aside.
  4. Add spinach and tomatoes to the skillet. Cook for 2-3 minutes until spinach wilts and tomatoes are heated.
  5. Return the cooked shrimp and pasta to the skillet. Toss together over medium heat for 1-2 minutes.
  6. Serve immediately, garnished with Parmesan cheese.
