  • 2 medium Cucumbers Firm, unwaxed
  • 1 small Red Onion Sliced
  • 14 oz Tofu Firm or extra-firm, pressed
  • 1 cup Edamame Shelled, frozen
  • 1 medium Carrot Thinly sliced or julienned
  • 2 stalks Spring Onion Chopped
For the Dressing
  • 4 oz Vegan Cream Cheese Or nut-based alternative
  • 2 tbsp Vegan Mayo
  • 1 tbsp Sriracha Adjust to taste
  • 1 tbsp Chili-Crisp Oil Optional
  • 2 tbsp Soy Sauce Low-sodium recommended
For Topping
  • 2 tbsp Sesame Seeds Toasted
  • 1 tbsp Nori Flakes Optional

Method
 

Preparation Steps
  1. Thinly slice the cucumber and place it in a jar, pressing lightly to compact.
  2. Slice red onion, tofu, and carrot; set in separate bowls.
  3. Add shelled edamame and finely chopped spring onion for presentation.
  4. Layer onion over cucumbers, then tofu, edamame, carrots, and spring onion.
  5. In a bowl, whisk together vegan cream cheese, vegan mayo, Sriracha, chili-crisp oil, and soy sauce until smooth.
  6. Spoon dressing over vegetables in the jar without saturating the bottom layers.
  7. Sprinkle sesame seeds and nori flakes on top before sealing the jar.
  8. Chill in the refrigerator for at least one hour or overnight for best results.
  9. Shake gently before serving and enjoy directly from the jar or over rice/noodles.
