Ingredients
  

  • 2 pounds beef short ribs
  • 1 tablespoon olive oil
  • 4 large onions thinly sliced
  • 3 tablespoons butter
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 slices French bread
  • 1 cup shredded Gruyère or mozzarella cheese

Method
 

  1. Season and sear the short ribs in oil, then remove.
  2. In the same pot, melt butter and caramelize onions until golden, about 25 minutes.
  3. Return ribs to the pot, add broth, Worcestershire, thyme, salt, and pepper.
  4. Cover and simmer for 2 hours until meat is tender.
  5. Remove bones and shred beef.
  6. Ladle soup into bowls, top with toasted bread and cheese, and broil until bubbly.

Notes

  • Caramelizing onions properly is key—take your time.
  • Swap cheese based on preference.
