- Preheat your oven to 350°F (180°C) and grease a 9-inch loaf pan with parchment paper.
- Roughly chop the fresh spinach and pulse in a food processor until finely chopped.
- In a large mixing bowl, whisk together the flour, baking powder, bicarbonate of soda, salt, and onion granules.
- In another bowl, whisk the eggs, vegetable oil, and buttermilk until smooth. Fold in most of the chopped spinach and cheese.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top, and sprinkle remaining cheese on top.
- Bake for about 1 hour or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
