  • 1/2 tsp Bicarbonate of Soda
  • 1 tsp Onion Granules Garlic granules as substitute

  • 1/2 cup Cottage Cheese For topping
  • 1 medium Avocado Sliced
  • 1/4 cup Sun-Dried Tomato Pesto For spreading

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and grease a 9-inch loaf pan with parchment paper.
  2. Roughly chop the fresh spinach and pulse in a food processor until finely chopped.
  3. In a large mixing bowl, whisk together the flour, baking powder, bicarbonate of soda, salt, and onion granules.
  4. In another bowl, whisk the eggs, vegetable oil, and buttermilk until smooth. Fold in most of the chopped spinach and cheese.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top, and sprinkle remaining cheese on top.
  7. Bake for about 1 hour or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
