Method

Step-by-Step Instructions for Fluffy Microwave Baked Oats
  1. In a high-speed blender, mix together old-fashioned rolled oats, an egg (or flax egg for vegan), a ripe banana, nut butter, almond milk, vanilla extract, baking powder, and ground cinnamon. Blend the mixture for 20-40 seconds until it becomes smooth and creamy.
  2. After blending, remove the pitcher from the blender and fold in your choice of mix-ins like chocolate chips or fresh blueberries. Stir gently until the mix-ins are evenly distributed throughout the batter.
  3. Take a greased microwave-safe ramekin or mug and pour the prepared batter into it. Fill it to about two-thirds full to give the oats room to fluff up while cooking.
  4. Place the ramekin in the microwave and cook on high for 90-120 seconds, checking for doneness at around 90 seconds.
  5. Once ready, carefully remove the ramekin from the microwave. Let it cool for a moment before serving. Enjoy your delightful breakfast creation right away!
