Ingredients

For the Base
  • 1 cup Old-Fashioned Rolled Oats Use gluten-free rolled oats for a gluten-friendly option.
  • 1 large Egg Can be substituted with a flax egg (1 tbsp ground flaxseed + 2.5 tbsp water).
  • 1 medium Over-ripe Banana Unsweetened applesauce can be used as a substitute.
For the Creaminess
  • 2 tbsp Nut Butter (Peanut/Almond) Sunflower seed butter can be used to keep it nut-free.
  • 1 cup Almond Milk Any plant-based milk like oat or coconut milk is acceptable.
For Flavoring
  • 1 tsp Vanilla Extract Fresh vanilla bean can add richness.
  • 1 tsp Baking Powder Essential for achieving a perfect rise.
  • 1 tsp Ground Cinnamon or Pumpkin Spice Feel free to try nutmeg or ginger for variations.
For Sweetness
  • 1 tbsp Honey or Maple Syrup Optional, can be omitted for less sweetness.
For Personalization
  • 1/4 cup Chocolate Chips or Blueberries Dried fruits or nuts can be great alternatives.

Equipment

  • high-speed blender
  • microwave-safe ramekin or mug

Method

Step-by-Step Instructions
  1. In a high-speed blender, combine the old-fashioned rolled oats, large egg, over-ripe banana, nut butter, almond milk, vanilla extract, baking powder, and ground cinnamon. Blend on high for 20 to 40 seconds until smooth.
  2. Transfer the batter to a bowl and gently fold in your preferred mix-ins, such as chocolate chips or blueberries.
  3. Grease a microwave-safe ramekin or mug with cooking spray or oil, then carefully pour the batter into the prepared dish.
  4. Microwave on high for 90 to 120 seconds, checking for doneness after 90 seconds. The oats should be puffed and firm to the touch.
  5. Let it cool briefly before serving. Top with yogurt, fresh fruits, nut butter, or honey if desired.
