Ingredients
  

  • 2 cups cottage cheese
  • 1 cup Greek yogurt
  • 3/4 cup honey
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup cornstarch
  • 1 cup fresh strawberries sliced
  • 2 tablespoons honey for topping

Method
 

  1. Preheat the oven to 325°F (163°C) and grease a baking dish or line it with parchment paper.
  2. In a blender or food processor, combine cottage cheese, Greek yogurt, honey, eggs, vanilla extract, and cornstarch. Blend until smooth and creamy.
  3. Pour the batter into the prepared baking dish and smooth the top.
  4. Bake for 40-45 minutes, or until the center is set and slightly firm.
  5. Remove from the oven and let the cheesecake cool at room temperature. Then refrigerate for at least 3 hours or overnight for the best texture.
  6. Before serving, top with sliced strawberries and drizzle with honey. Slice and enjoy!

Notes

    • For a firmer texture, refrigerate overnight before serving.
    • Swap honey for maple syrup for a different natural sweetener.
    • To make it dairy-free, use plant-based yogurt and cottage cheese alternatives.
