In a blender or food processor, combine cottage cheese, Greek yogurt, honey, eggs, vanilla extract, and cornstarch. Blend until smooth and creamy.
Pour the batter into the prepared baking dish and smooth the top.
Bake for 40-45 minutes, or until the center is set and slightly firm.
Remove from the oven and let the cheesecake cool at room temperature. Then refrigerate for at least 3 hours or overnight for the best texture.
Before serving, top with sliced strawberries and drizzle with honey. Slice and enjoy!
