- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together 1 cup of salted butter, ¾ cup of dark brown sugar, and ¾ cup of light brown sugar until smooth and fluffy.
- Add in 2 large eggs plus 1 yolk and 1 teaspoon of vanilla extract; mix until well combined.
- Whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, and ½ teaspoon of kosher salt, then fold into the wet ingredients.
- Fold in 2 cups of old-fashioned oats, 1 cup of crushed mini pretzel sticks, 1 cup of semi-sweet chocolate chips, and 1 ½ cups of Halloween M&M’s.
- Scoop dough using a quarter-cup measure and place them on the baking sheet, spacing them about 3 inches apart.
- Bake for 8 minutes, then rotate and bake for an additional 2 minutes. Press more M&M’s onto each cookie and bake for 2-3 more minutes.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
