Ingredients
  

  • 2 pounds beef chuck roast or stew meat cut into bite-sized pieces
  • 1.5 pounds baby potatoes halved or quartered
  • 6 cloves garlic minced
  • 1/2 cup unsalted butter melted
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped (for garnish)
  • Salt and pepper to taste

Method
 

  1. Prepare the Ingredients: Pat the beef dry with paper towels and cut the baby potatoes into halves or quarters for even cooking.
  2. Optional Sear: Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned on all sides (3-4 minutes per batch).
  3. Layer in Slow Cooker: Place the potatoes in the bottom of the slow cooker, followed by the beef bites on top.
  4. Make the Sauce: In a small bowl, whisk together melted butter, minced garlic, soy sauce, and beef broth. Pour the sauce over the beef and potatoes.
  5. Cook: Cover the slow cooker and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
  6. Garnish and Serve: Sprinkle chopped parsley over the dish before serving. Enjoy hot!
