  • 1 cup Frozen Corn or canned corn when drained
  • 1 can Low Sodium Black Beans or any canned beans
  • 1 cup Red Enchilada Sauce homemade or store-bought
For the Tortilla Layer
  • 6 pieces Corn Tortillas cut into triangles, can substitute with flour tortillas
For the Topping
  • 1 cup Shredded Colby Jack Cheese can substitute with cheddar or Monterey Jack
