Ingredients
  

  • 2 cups rotisserie chicken shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. In a skillet over medium heat, add olive oil. Once hot, add the shredded rotisserie chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and heat through for about 5 minutes.
  2. While the chicken is heating, warm the tortillas in a separate skillet or microwave until pliable.
  3. Assemble the tacos by placing a generous amount of the seasoned chicken on each tortilla.
  4. Top each taco with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and chopped cilantro.
  5. Serve immediately with lime wedges on the side for squeezing over the tacos.
