Ingredients
  

  • 1 pre-made pie crust or homemade equivalent
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/2 cup light or dark corn syrup
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Mini chocolate chips shredded coconut, or a splash of bourbon for variation.

Method
 

  1. Prepare the Pie Crust: Roll out the pie crust on a floured surface. Cut circles slightly larger than the cups of a mini muffin tin. Gently press each circle into the tin, ensuring the dough covers the bottom and sides.
  2. Make the Filling: In a mixing bowl, whisk together brown sugar, corn syrup, melted butter, egg, vanilla extract, and salt until smooth. Fold in the chopped pecans.
  3. Assemble: Spoon about 1 tablespoon of the pecan mixture into each crust-lined cup, being careful not to overfill.
  4. Bake: Preheat your oven to 350°F (175°C). Bake for 20–25 minutes or until the filling is set and the crust is golden brown.
  5. Cool: Allow the bites to cool in the tin for 10 minutes before transferring them to a wire rack. Serve warm or at room temperature.

Notes

  • For a gluten-free option, substitute the pie crust with a gluten-free alternative.
  • To prevent sticking, grease the muffin tin well or use mini cupcake liners.
