Ingredients

For the Marinade
  • 1 medium Kiwi Acts as a natural meat tenderizer; avoid using if allergic.
  • 4 stalks Green Onions Adds fresh flavor and color; substitute with ¼ onion if needed.
  • 0.5 cup Pineapple Juice Contributes sweetness and acidity; do not use fresh pineapple juice.
  • 0.25 cup Soy Sauce Provides savory depth; choose tamari or coconut aminos for gluten-free option.
  • 2 tbsp Brown Sugar Adds sweetness; can be substituted with white sugar or maple syrup.
  • 2 tbsp Sesame Oil Enhances nutty flavor; toasted sesame oil is recommended for a richer taste.
  • 4 cloves Garlic Essential for aromatic depth; always use fresh garlic.
  • 1 tbsp Fresh Ginger Adds warmth and spice; freshly grated ginger is preferred.
For the Beef
  • 2 lbs Beef Short Ribs Main protein; should be boneless and cut into ½-inch thick strips for even cooking.

Equipment

  • blender
  • Grill or Air Fryer
  • Ziploc Bag or Shallow Dish

Method

Step-by-Step Instructions
  1. In a blender, combine the medium kiwi, green onions, pineapple juice, soy sauce, brown sugar, sesame oil, garlic, and fresh ginger. Blend until smooth and well-combined.
  2. Place the boneless beef short ribs into a large Ziploc bag or a shallow dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover and refrigerate for at least 2 hours, or ideally overnight.
  3. Before you cook, preheat your grill to medium-high heat (around 400°F). If using an air fryer, set it to 400°F as well.
  4. Remove the marinated beef short ribs from the refrigerator, allowing them to reach room temperature for about 15 minutes. Grill the ribs for approximately 5 minutes on each side, turning when golden brown and slightly charred.
  5. Once fully cooked, transfer the ribs to a serving platter. Allow them to rest for about 5 minutes before serving.
