Cooking Steps
- Heat a large skillet over medium-high heat. Add the ground chicken and break it apart as it cooks, stirring frequently for about 5-6 minutes until browned.
- Drain any excess fat from the skillet. Stir in taco seasoning and 2-3 tablespoons of water. Cook for another 2 minutes.
- Remove the skillet from the heat and let the chicken rest for about 5 minutes.
- Prepare the cauliflower rice: Microwave frozen cauliflower rice for 4-5 minutes or sauté fresh for 3-4 minutes.
- Layer romaine lettuce, cauliflower rice, seasoned chicken, avocado, cherry tomatoes, red onion, and Mexican cheese blend in serving bowls.
- Top each bowl with sour cream, salsa, minced jalapeño, and lime juice before serving.
