  3. In another bowl, whisk the eggs with melted butter, milk, and almond extract until blended.
  4. Gradually add the dry ingredients to the wet mixture and gently fold in the diced peaches.
  5. In a deep saucepan, heat vegetable oil over medium heat to 375°F.
  6. Using a 1/4 cup measure, drop spoonfuls of batter into the hot oil and fry for 2-4 minutes per side until golden brown.
