Ingredients

For the Meatloaf:
  • 2 pounds lean ground beef 85/15 or 90/10 recommended
  • ½ cup diced white onion
  • 2 large eggs
  • 1 cup gluten-free breadcrumbs
  • 2 cloves garlic minced
  • ¼ cup milk of choice whole, 2%, almond, etc.

  • ½ teaspoon freshly ground black pepper adjust to taste
For the Glaze:
  • ½ cup ketchup
  • 2 tablespoons packed light brown sugar
  • 1 teaspoon Dijon mustard

Method

  1. Preheat & Prep: Preheat the oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Mix the Ingredients: In a large bowl, combine the ground beef, diced onion, eggs, breadcrumbs, minced garlic, milk, salt, and black pepper. Mix gently until just combined.
  3. Shape the Meatloaf: Transfer the mixture to the loaf pan and shape it into an even loaf.
  4. Prepare the Glaze: In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread half of the glaze over the top of the meatloaf.
  5. Bake: Place the meatloaf in the oven and bake for 40 minutes.
  6. Add More Glaze & Finish Baking: Remove from the oven, spread the remaining glaze on top, and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite side dishes.

Notes

  • Avoid overmixing the meat mixture to keep the meatloaf tender.
  • Letting the meatloaf rest before slicing ensures a juicy and flavorful bite.
  • If using a sheet pan instead of a loaf pan, shape the meat mixture into a free-form loaf for crispier edges.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
