Ingredients
  

  • Large eggs separated
  • Cottage cheese blended until smooth
  • Cream of tartar
  • Salt
  • Cornstarch or arrowroot powder optional, for structure

Method
 

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two bowls.
  3. Beat the egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, mix cottage cheese, egg yolks, salt, cornstarch (if using), and honey (if desired) until smooth.
  5. Gently fold the egg whites into the yolk mixture in thirds to keep the batter airy.
  6. Spoon the mixture onto the baking sheet, forming 6-8 rounds.
  7. Bake for 25-30 minutes, or until golden brown and set.
  8. Allow to cool completely before serving.
