Ingredients
  

For the Marinated Chicken:
  • 1 lb boneless skinless chicken thighs or breasts
  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
For the Gyro Bowls:
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ cup red onion thinly sliced
  • ¼ cup Kalamata olives pitted and halved
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley or dill chopped
  • ½ cup tzatziki sauce
  • Warm pita bread cut into wedges (optional)

Method
 

  1. Marinate the Chicken
  2. In a bowl, combine Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Coat the chicken and marinate for at least 30 minutes (or up to 24 hours).
  3. Cook the Chicken
  4. Heat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked and slightly charred. Let it rest for 5 minutes, then slice into strips.
  5. Assemble the Bowls
  6. Divide the cooked rice or quinoa into bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  7. Add the Finishing Touches
  8. Drizzle with tzatziki sauce, garnish with fresh parsley or dill, and serve with warm pita wedges if desired.
