  • 200 grams Fresh Udon Noodles Boil just until tender.
For the Protein
  • 100 grams Shabu Shabu Beef Thinly sliced.
For the Aromatics
  • 0.5 whole Onion Slice thinly.
  • 1 teaspoon Garlic Minced.
  • 0.5 teaspoon Ginger Minced, optional.
For the Sauce
  • 0.25 cup Dark Soy Sauce Also known as Kicap Manis.
  • 1 teaspoon Oyster Sauce
  • 1 tablespoon Tomato Paste
  • 2 teaspoons Black Pepper Adjusted to preference.
  • 1 cup Water
For the Greens
  • 150 grams Chye Sim Or any leafy greens.
For Thickening
  • 2 teaspoons Cornstarch Slurry Mix cornstarch with water.

Method
 

Step-by-Step Instructions
  1. Boil water in a pot and cook udon noodles for 2-3 minutes until tender. Drain and set aside.
  2. Heat oil in a large frying pan or wok, add sliced onion, and cook for 1-2 minutes until translucent.
  3. Add minced garlic and ginger (if using); cook for 1 minute until fragrant.
  4. Add shabu shabu beef to the pan and stir-fry for 1-2 minutes until browned.
  5. Pour in dark soy sauce, oyster sauce, tomato paste, and black pepper; stir for 30 seconds.
  6. Add drained udon noodles and 1 cup water; toss for 2-3 minutes to mix well.
  7. Mix cornstarch with water in a bowl; add to pan and stir continuously for 1 minute to thicken.
  8. Fold in chye sim or leafy greens; cook for 1 minute until just wilted.
  9. Serve hot, adjusting seasoning as needed.
