Ingredients
  

  • 20 oz 1 ¼ lbs boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter divided
  • 3 garlic cloves minced
  • 2 tbsp parsley freshly chopped

Method
 

  1. Prepare the Chicken: In a small bowl, mix the flour, oregano, basil, paprika, salt, and freshly ground pepper. Dredge the chicken breasts lightly in the mixture, shaking off any excess.
  2. Sear the Chicken: Heat olive oil and 1 tbsp butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
  3. Make the Garlic Butter Sauce: In the same skillet, melt the remaining 2 tbsp butter. Add the minced garlic and sauté for 30 seconds until fragrant. Stir in the chopped parsley and let the flavors meld for another 30 seconds.
  4. Coat the Chicken: Return the chicken to the skillet, spooning the garlic butter sauce over the top. Let it simmer for 1-2 minutes, then serve warm.

Notes

    • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).
    • Let the chicken rest for a few minutes after cooking to keep it juicy.
    • Store leftovers in an airtight container in the fridge for up to 4 days.
