Ingredients

For the Casserole
  • 12 ounces Uncooked Penne Pasta Feel free to swap with ziti, rotini, or fusilli, as long as they’re uncooked.
  • 24 ounces Marinara Sauce Choose your go-to jarred sauce for ease.
  • 2 cups Water Ensure it covers the pasta before baking for best results.
  • 1 teaspoon Salt Adjust based on your marinara’s seasoning.
  • 1 teaspoon Ground Black Pepper Add more if you like an extra kick.
  • 1 pound Raw Chicken Breast Opt for fresh chicken for optimal flavor; if using frozen, ensure it’s completely thawed.
  • 2 cups Shredded Mozzarella Cheese You can substitute it with an Italian cheese blend if you wish.
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano can offer a sharper flavor if you prefer.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs will work too if you don’t have Panko.
Optional Garnish
  • 1/4 cup Fresh Chopped Herbs (Basil/Parsley) They elevate both presentation and aroma, making it visually appealing.

Equipment

  • 13x9-inch baking dish
  • Mixing bowl

Method

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and spray a 13x9-inch baking dish with nonstick spray.
  2. In a large mixing bowl, combine uncooked penne pasta, marinara sauce, water, salt, pepper, and raw chicken cut into bite-sized pieces.
  3. Pour the combined mixture into the prepared baking dish and spread evenly. Cover with aluminum foil.
  4. Bake for 30 minutes. You'll see edges bubbling and smells wafting.
  5. Remove the foil, stir the mixture gently, which will still be slightly firm with some liquid remaining.
  6. Sprinkle mozzarella cheese, panko, and Parmesan cheese on top.
  7. Bake uncovered for an additional 10-15 minutes until the cheese is melted and golden brown.
  8. Garnish with freshly chopped herbs and serve warm.
