Method
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease an 11×7-inch casserole dish with nonstick spray or butter to prevent sticking.
Step 2: Cook the Beef Mixture
- Heat a large skillet over medium-high heat. Add the ground beef and diced onion.
- Break up the beef with a spatula and cook until browned and the onions are softened, about 6–8 minutes.
- Drain any excess grease.
- Add the taco seasoning, water, and chunky salsa to the skillet. Stir until combined and simmer for about 5 minutes, or until the mixture thickens slightly.
Step 3: Add Creamy Ingredients
- Reduce the heat to low and stir in the sour cream, cheese soup or cheese dip, black beans, and corn.
- Mix until well combined and let it simmer for 5 minutes to bring the flavors together.
Step 4: Layer the Casserole
- Slightly crush the Doritos with your hands or in the bag.
- Spread 1 ½ cups of crushed Doritos evenly across the bottom of the prepared casserole dish.
- Add half of the beef mixture on top of the Doritos, followed by 1 cup of shredded cheddar cheese.
- Add another layer of crushed Doritos, followed by the remaining beef mixture.
- Top with an additional 1 to 1 ½ cups of crushed Doritos and the remaining cup of shredded cheddar cheese.
Step 5: Bake the Casserole
- Cover the casserole dish with aluminum foil and bake for 15–20 minutes, or until the cheese is melted and the casserole is heated through.
- Remove the foil and bake for an additional 5–10 minutes, or until the Doritos are slightly crisped and the cheese is golden and bubbly.
Step 6: Garnish and Serve
- Remove the casserole from the oven and let it rest for 5 minutes before serving.
- Garnish with fresh cilantro, diced tomatoes, sliced green onions, or avocado, if desired.
- Serve warm and enjoy!
Notes
- Doritos Crunch: For extra crunch, reserve a handful of crushed Doritos and sprinkle them on top of the casserole just before serving.
- Spice Level: Use mild salsa and omit the taco seasoning if you prefer a less spicy dish. For more heat, add diced jalapeños or use hot salsa.
- Meat Options: You can substitute ground turkey or ground chicken for the ground beef if desired.
- Vegetarian Option: Replace the ground beef with an additional cup of black beans or cooked plant-based crumbles.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warm.
- Freezing Instructions: Freeze the assembled casserole (without baking) for up to 3 months. Thaw overnight in the fridge and bake as directed.
