  • 1 large Egg acts as a binder

Method
 

Basic Instructions
  1. Drain ricotta cheese in a fine-mesh sieve lined with cheesecloth for 30 minutes to 1 hour.
  2. Combine drained ricotta, egg, sugar, vanilla extract, almond extract, and salt in a mixing bowl. Mix until smooth.
  3. Cover mixture with plastic wrap and refrigerate for 30 minutes.
  4. Chop pistachios finely for the coating.
  5. Mix chopped pistachios with flour and sugar in a shallow dish.
  6. Scoop chilled ricotta mixture into 1-inch balls.
  7. Roll each ball into a smooth shape with dampened hands.
  8. Coat each ricotta ball in the pistachio mixture.
  9. Arrange coated bites on a parchment-lined baking sheet.
  10. Preheat oven to 350°F (175°C).
  11. Bake bites for 12-15 minutes until golden.
  12. Let bites cool on the baking sheet for a few minutes, then transfer to a wire rack.
  13. Gently heat honey and water in a saucepan until blended.
  14. Drizzle honey mixture over cooled bites.
  15. Garnish with extra chopped pistachios, edible flowers, and a sprinkle of sea salt if desired.
  16. Serve immediately or store in an airtight container for up to 3 days.
