Method

Preparation
  1. In a medium bowl, combine honey, hot sauce, and chili flakes, stirring well. Transfer to a microwave-safe container or small saucepan, heating until warm. Set aside to cool slightly.
  2. On a cutting board, slice chicken breasts horizontally to create four thinner pieces. Season with salt and pepper.
  3. Prepare three shallow dishes: combine flour with half of the spice mixture in the first, beat eggs in the second, and mix Panko with the remaining spices in the third.
  4. Dredge each chicken piece in the seasoned flour, dip in beaten eggs, and press into Panko, ensuring thorough coating.
  5. Heat vegetable oil in a skillet over medium-high heat. Fry chicken pieces for 3-4 minutes on each side until golden brown.
  6. Preheat the oven's broiler. Arrange fried chicken on a baking sheet, crumble feta over each piece, and broil for 2-3 minutes until the feta melts.
  7. Drizzle homemade hot honey over the chicken and serve immediately with fresh sides like salad or quinoa.
