- Thaw half of the frozen dragon fruit in a bowl at room temperature for about 30 minutes. Mash gently until smooth.
- Crush the graham crackers into fine crumbs. Combine with sugar and melted butter until sandy. Press into the bottom of a 9-inch springform pan. Freeze for 15 minutes.
- Whip heavy cream with sugar until stiff peaks form. Refrigerate while mixing cream cheese.
- Beat softened cream cheese until creamy. Gradually add sugar and vanilla, mixing until smooth.
- Fold whipped cream into the cream cheese mixture until no streaks remain.
- Dissolve unflavored gelatin in 1/4 cup of warm water and mix into the cream cheese blend.
- Pour half of the cream cheese mixture into the crust. Freeze for 30 minutes.
- Blend remaining cream cheese mixture with thawed dragon fruit and food coloring until smooth. Pour onto the set layer.
- Cover and freeze cheesecake overnight.
- Slice and serve chilled, garnished with whipped cream and fresh fruit.
