Method
 

Step-by-Step Instructions
  1. Thaw half of the frozen dragon fruit in a bowl at room temperature for about 30 minutes. Mash gently until smooth.
  2. Crush the graham crackers into fine crumbs. Combine with sugar and melted butter until sandy. Press into the bottom of a 9-inch springform pan. Freeze for 15 minutes.
  3. Whip heavy cream with sugar until stiff peaks form. Refrigerate while mixing cream cheese.
  4. Beat softened cream cheese until creamy. Gradually add sugar and vanilla, mixing until smooth.
  5. Fold whipped cream into the cream cheese mixture until no streaks remain.
  6. Dissolve unflavored gelatin in 1/4 cup of warm water and mix into the cream cheese blend.
  7. Pour half of the cream cheese mixture into the crust. Freeze for 30 minutes.
  8. Blend remaining cream cheese mixture with thawed dragon fruit and food coloring until smooth. Pour onto the set layer.
  9. Cover and freeze cheesecake overnight.
  10. Slice and serve chilled, garnished with whipped cream and fresh fruit.
