Preparation
- Line a baking sheet with parchment paper and lightly grease it with a little oil.
- In a heavy-bottomed saucepan, combine sugar, light corn syrup, water, and cream of tartar.
- Stir over medium heat until sugar is completely dissolved, about 3-5 minutes.
- Increase heat to medium-high and boil mixture without stirring, about 7-10 minutes, until temperature reaches 300°F-310°F.
- Remove from heat, stir in fresh orange zest, orange extract, and optional food coloring.
- Pour mixture onto prepared baking sheet, spreading evenly.
- Allow candy to cool completely, about 1 hour, then break into pieces.
