Method
 

Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic for about 3-5 minutes until translucent.
  3. In a mixing bowl, combine ground chicken, cooled sautéed onion and garlic, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Shape two-thirds of the meat mixture into a loaf on the baking sheet, leaving a well in the center for mozzarella cheese strings. Cover with remaining mixture.
  5. Spread marinara sauce over the top of the meatloaf.
  6. Bake for about 45 minutes or until the internal temperature reaches 74°C (165°F).
  7. Mix panko breadcrumbs, Parmesan cheese, and melted butter in a bowl for topping.
  8. After initial baking, sprinkle mozzarella and panko mixture over the top and bake for an additional 15-20 minutes.
  9. Let the meatloaf rest for about 10 minutes before slicing.
