- Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
- In a skillet, heat olive oil over medium heat and sauté onion and garlic for about 3-5 minutes until translucent.
- In a mixing bowl, combine ground chicken, cooled sautéed onion and garlic, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
- Shape two-thirds of the meat mixture into a loaf on the baking sheet, leaving a well in the center for mozzarella cheese strings. Cover with remaining mixture.
- Spread marinara sauce over the top of the meatloaf.
- Bake for about 45 minutes or until the internal temperature reaches 74°C (165°F).
- Mix panko breadcrumbs, Parmesan cheese, and melted butter in a bowl for topping.
- After initial baking, sprinkle mozzarella and panko mixture over the top and bake for an additional 15-20 minutes.
- Let the meatloaf rest for about 10 minutes before slicing.
