Preparation
- Cut the chicken thighs into 1½-inch cubes and place them into a mixing bowl.
- In a separate bowl, whisk together the marinade ingredients.
- Pour half of the marinade over the chicken and cover with plastic wrap.
- Marinate in refrigerator for at least 4 hours, ideally overnight.
- Reserve remaining marinade for basting.
- Preheat grill to medium heat.
- Thread marinated chicken onto soaked skewers.
- Grill skewers for 20 to 30 minutes, turning every 3-4 minutes.
- Baste with reserved marinade in the last few minutes.
- Remove from grill and let rest before serving.
