Step-by-Step Instructions
  1. Start by arranging the boneless, skinless chicken breasts at the bottom of your Crock Pot. Layer the diced onion and minced garlic on top.
  2. Pour in the chicken broth and canned diced tomatoes, stirring gently to combine.
  3. Sprinkle with Italian seasoning, and add salt and pepper to taste, mixing them in well.
  4. Cover and set to cook on low for 6 hours.
  5. Once cooked, carefully remove the chicken breasts and shred into bite-sized pieces.
  6. Return the shredded chicken, mix in heavy cream and grated Parmesan cheese until well combined.
  7. Add tortellini and fresh spinach, increasing heat to high and cooking for an additional 30 minutes.
  8. Serve in bowls, garnishing with fresh basil if desired.
