Step-by-Step Instructions for Vegan Drunken Noodles
- Bring a large pot of water to a boil and add the rice noodles. Cook according to package instructions (5-7 minutes), then drain and rinse under cold water.
- In a large pan or wok, heat oil over medium-high heat. Add sliced bell peppers and sauté for 3-4 minutes until slightly tender.
- Add cubed tofu and cook for 5-7 minutes, stirring gently until browned on all sides.
- Add the cooked rice noodles, soy sauce or tamari, and chili sauce. Toss for 2-3 minutes until well coated.
- Stir in fresh Thai basil and sauté for another minute until just wilted.
