- Blend the strained full-fat cottage cheese and large eggs until smooth and creamy.
- In a mixing bowl, combine the blended mixture with almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder. Stir until just combined.
- Gently fold in the mixed berries, ensuring they are evenly distributed.
- Pour the batter into the greased baking dish, spreading it evenly.
- Bake for 35-40 minutes, until the top is golden and a toothpick comes out clean.
- Allow to cool for 20-30 minutes before slicing into squares.
