  • 3 cups Carrots Sliced; any root veggie can substitute
  • 1 piece Onion Chopped

Preparation Steps
  1. Place the corned beef in a large pot and cover it with 4 cups of beef broth. Bring to a gentle boil over medium-high heat.
  2. Once boiling, reduce heat to low and cover. Let the corned beef simmer gently for 3 hours.
  3. After 3 hours, add the diced potatoes, chopped cabbage, sliced carrots, and chopped onion to the pot. Stir gently and simmer uncovered for 30-40 minutes.
  4. Stir in 2 tablespoons of butter until melted, season with salt and pepper to taste, and serve warm.
