For the Dressing
  • 3 tablespoons Balsamic Vinegar
  • 2 tablespoons Olive Oil
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Honey or Maple Syrup Optional for sweetness

Equipment

  • Salad bowl
  • Small Bowl or Jar

Method

Step-by-Step Instructions
  1. Wash the spinach thoroughly under cool running water, then pat dry. In a large salad bowl, add 6 cups of spinach. Hull and slice 2 cups of strawberries and scatter them over the spinach.
  2. Slice half a small red onion and sprinkle it over the salad. Coarsely chop 0.5 cups of roasted pistachios and add them to the bowl. Crumble 0.5 cups of feta cheese atop the salad.
  3. In a small bowl or jar, combine 3 tablespoons of balsamic vinegar, 2 tablespoons of olive oil, and 1 teaspoon of minced garlic. Optionally, add 1 teaspoon of honey or maple syrup. Whisk or shake until well blended.
  4. Drizzle the balsamic vinaigrette over the salad and toss gently to coat without bruising the spinach or strawberries.
  5. Serve the salad immediately on a large platter or in individual bowls. For make-ahead, keep the dressing separate until serving time.
