- Preheat your oven to 375°F (190°C).
- Stack three pie crusts and roll them out into a large rectangle. Press it into the pan.
- Combine strawberries, sugar, cornstarch, lemon juice, lemon zest, vanilla, and salt in a bowl. Toss until coated.
- Pour the strawberry mixture into the crust. Cut decorative shapes from the remaining crust for the top.
- Brush the top with milk and sprinkle with coarse sugar. Bake for 45-50 minutes.
- Let the pie cool completely for at least 2 hours.
