- In a wide, shallow bowl, crack and whisk together the large eggs until well combined and slightly frothy.
- Dip one rice paper sheet into the egg mixture for about 5 seconds, ensuring it’s fully coated but not overly soggy.
- Once you have three rice paper sheets ready, lay them side by side on a flat surface, slightly overlapping each sheet.
- Spread a thin layer of pizza sauce evenly across the rice paper sheets, leaving a small border at the edges.
- Sprinkle a generous layer of shredded Gouda cheese, followed by deli chicken or turkey slices, and then add the chopped pepperoni.
- Fold the sides of each rice paper sheet over the filling to tuck it in, then start rolling tightly from one end to the other.
- Place each assembled roll seam-side down on a parchment-lined baking sheet.
- Preheat your air fryer or oven to 350°F. Bake the Rice Paper Pizza Rolls for about 15 minutes or until golden brown and crispy.
