Ingredients
  

For the Slaw
  • 1 head Purple Cabbage or green cabbage if desired
  • 1 medium Carrot any color
  • 1 small Red Onion or substitute with white onion
  • 1 medium Red Capsicum or yellow/orange peppers
  • 1 medium Red Apple Honeycrisp or Fuji recommended
  • 1 cup Parmesan Cheese can substitute with aged Cheddar or omit
For the Dressing
  • 1/2 cup Mayonnaise Greek yogurt is an alternative
  • 1/4 cup Yogurt or add more mayonnaise
  • 1 tablespoon Dijon Mustard any mustard type will work
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Remove the core from the purple cabbage and finely shred the leaves. Fill a large mixing bowl with it.
  2. Shred the carrot and dice the red apple, red onion, and red capsicum. Add them to the mixing bowl.
  3. Incorporate the shredded Parmesan cheese into the vegetable mixture.
  4. In a separate bowl, combine mayonnaise, yogurt, Dijon mustard, salt, and pepper. Whisk until smooth.
  5. Pour the dressing over the coleslaw ingredients and gently toss to coat.
  6. Let the coleslaw rest for about 10 minutes before serving.
