- Start by placing your frozen corn, carrots, and peas in a bowl and cover them with hot water. Let them sit for about 1 minute until thawed, then drain them well.
- Mince 2-3 cloves of fresh garlic and chop a few green onions, separating the white parts from the green tops.
- In a separate bowl, crack open 2 eggs and whisk them until well combined. Then, cut the SPAM into ½-inch cubes.
- In a small bowl, prepare the sauce by mixing 2 tablespoons of soy sauce, 1 teaspoon of sugar, and a splash of water.
- Heat your wok over medium-high heat and add a drizzle of avocado oil. Once hot, toss in the SPAM cubes and fry for about 2 minutes until crispy.
- Add minced garlic and the white parts of the green onions into the wok and sauté for about 1 minute until golden and fragrant.
- Add 4 cups of day-old jasmine rice into the wok, breaking it apart with a spatula. Season with salt and white pepper, and cook for about 2-3 minutes.
- Create a well in the center of the hot rice, add more oil if needed, pour in the whisked eggs, scramble until fully cooked, and mix into the rice.
- Push the rice and egg mixture to one side of the wok, add a drizzle of oil, and toss in the thawed vegetables. Cook for about 2 minutes.
- Combine the rice, eggs, and vegetables back in the wok. Pour the prepared sauce over and mix well until coated. Drizzle with toasted sesame oil.
- Plate your Musubi Spam Fried Rice and garnish with chopped green tops of the onions and a sprinkle of nori strips. Drizzle with sriracha if desired.
