Step-by-Step Instructions
  1. Start by placing your frozen corn, carrots, and peas in a bowl and cover them with hot water. Let them sit for about 1 minute until thawed, then drain them well.
  2. Mince 2-3 cloves of fresh garlic and chop a few green onions, separating the white parts from the green tops.
  3. In a separate bowl, crack open 2 eggs and whisk them until well combined. Then, cut the SPAM into ½-inch cubes.
  4. In a small bowl, prepare the sauce by mixing 2 tablespoons of soy sauce, 1 teaspoon of sugar, and a splash of water.
  5. Heat your wok over medium-high heat and add a drizzle of avocado oil. Once hot, toss in the SPAM cubes and fry for about 2 minutes until crispy.
  6. Add minced garlic and the white parts of the green onions into the wok and sauté for about 1 minute until golden and fragrant.
  7. Add 4 cups of day-old jasmine rice into the wok, breaking it apart with a spatula. Season with salt and white pepper, and cook for about 2-3 minutes.
  8. Create a well in the center of the hot rice, add more oil if needed, pour in the whisked eggs, scramble until fully cooked, and mix into the rice.
  9. Push the rice and egg mixture to one side of the wok, add a drizzle of oil, and toss in the thawed vegetables. Cook for about 2 minutes.
  10. Combine the rice, eggs, and vegetables back in the wok. Pour the prepared sauce over and mix well until coated. Drizzle with toasted sesame oil.
  11. Plate your Musubi Spam Fried Rice and garnish with chopped green tops of the onions and a sprinkle of nori strips. Drizzle with sriracha if desired.
