Preparation and Roasting
- Preheat your oven to 400°F (200°C).
- Prepare the eggplant by cutting it into uniform 1-inch cubes, then toss with olive oil, salt, and pepper.
- Spread the eggplant on a baking sheet and roast for 20-25 minutes, flipping halfway through.
- While roasting, whisk together the miso glaze ingredients until smooth.
- Coat the eggplant with the miso glaze and return to the oven for an additional 5-7 minutes.
- Remove from oven, garnish with sesame seeds and green onions, and serve warm.
