  • 3 tablespoons White Miso Paste
  • 2 tablespoons Mirin or rice vinegar mixed with sugar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Fresh Ginger finely grated
  • 1 clove Garlic minced

Method
 

Preparation and Roasting
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the eggplant by cutting it into uniform 1-inch cubes, then toss with olive oil, salt, and pepper.
  3. Spread the eggplant on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  4. While roasting, whisk together the miso glaze ingredients until smooth.
  5. Coat the eggplant with the miso glaze and return to the oven for an additional 5-7 minutes.
  6. Remove from oven, garnish with sesame seeds and green onions, and serve warm.
