Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt.
  3. In a large bowl, cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs, vanilla extract, and almond extract to the creamed mixture, mixing until combined.
  5. Fold in a small amount of pink gel food coloring if desired, mixing until evenly distributed.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Fold in the chopped maraschino cherries and semi-sweet chocolate chips until evenly distributed.
  8. Using a cookie scoop, portion out the dough and place it on the prepared baking sheet, spacing them apart.
  9. Bake for 10-13 minutes until edges are set but centers remain soft.
  10. Remove from oven and let cool on the baking sheet for 15 minutes before transferring to a cooling rack.
