Step-by-Step Instructions
  1. Cook yakisoba noodles according to package instructions (3-4 minutes), drain, and rinse under cold water.
  2. In a medium bowl, whisk together oyster sauce, ketchup, soy sauce, and brown sugar until combined.
  3. Heat 2 tbsp of peanut oil in a large wok over medium-high heat.
  4. Add cubed chicken to the hot oil, stir-fry for 5-7 minutes until golden and cooked through.
  5. Add sliced onion, julienned carrot, and shiitake mushrooms. Stir-fry for 3-4 minutes.
  6. Combine cooked yakisoba noodles and prepared sauce with chicken and vegetables, tossing for 2-3 minutes.
  7. Remove from heat, transfer to plates, and garnish with sliced green onions. Serve immediately.
