  1. In a mixing bowl, combine gluten-free flour, baking powder, protein powder, and salt. Whisk to blend the dry ingredients thoroughly for about 1 minute.
  2. Incorporate the plain unsweetened Greek yogurt into the dry mix, stirring until a sticky dough forms. This should take about 2-3 minutes.
  3. Lightly flour your work surface to prevent sticking. Divide the dough into 10 equal pieces, rolling each into a smooth ball over about 5 minutes. Flatten each ball into a disc, allowing space for your cream cheese filling.
  4. Make an indentation in the center of each disc and place about 1 teaspoon of cream cheese inside. Fold the edges over the filling and pinch securely to seal.
  5. Prepare the egg wash by beating an egg in a small bowl. Brush each bagel bite gently with the egg wash.
