Ingredients

  • 1 pound Chicken Tenderloins or chicken breasts
  • 1/4 cup Plain Non-Fat Greek Yogurt dairy-free yogurt works well too
  • 1/4 cup Olive Oil or avocado oil
  • 1 each Lemon Juice and Zest can substitute with white vinegar
  • 1 teaspoon Dried Rosemary or thyme/oregano
  • 1 teaspoon Sea Salt adjust to taste
  • 1/2 teaspoon Black Pepper use freshly ground for added zest
  • 1/2 teaspoon Oregano can swap for basil
For the Tzatziki
  • 1.5 cups Easy Tzatziki Dip yogurt, shredded cucumber, and fresh dill
For the Bowl
  • 1 package Ben's Original Ready Rice Jasmine or quinoa
  • 6 cups Romaine Lettuce shredded
  • 1.5 cups Cherry Tomatoes halved
  • 1.5 cups Cucumbers sliced
  • 1 cup Fat-Free Feta Cheese or plant-based feta
  • 1 each Pickled Red Onions optional

Preparation
  1. Prepare the Marinade: In a medium bowl, whisk together 1/4 cup Greek yogurt, 1/4 cup olive oil, juice and zest of one lemon, 1 teaspoon dried rosemary, 1 teaspoon sea salt, 1/2 teaspoon black pepper, and 1/2 teaspoon oregano until smooth.
  2. Marinate the Chicken: Coat chicken tenderloins with the marinade, cover, and refrigerate for 30 minutes to 2 hours.
  3. Preheat the Grill: Heat grill to 400°F (200°C) and oil the grates to prevent sticking.
  4. Grill the Chicken: Place marinated chicken on the grill, cooking for 3-5 minutes per side until internal temperature reaches 165°F.
  5. Cook the Rice: Prepare the Ben's Original Ready Rice Jasmine according to package instructions.
  6. Assemble the Bowls: Layer cooked rice, shredded romaine, halved cherry tomatoes, sliced cucumbers, grilled chicken, crumbled feta, and dollop of tzatziki in serving bowls.
  7. Enjoy or Store: Serve immediately or store components separately in airtight containers in the fridge.
