- Preheat your oven to 450°F (230°C) and prepare a baking sheet with parchment paper or greased with cooking oil.
- In a mixing bowl, combine the peeled and diced apples with brown sugar and cinnamon, mixing well.
- Soak rice paper sheets one at a time in warm water for about 10 seconds until pliable, then place on a flat surface.
- Spoon 1-2 tablespoons of apple filling onto the center of the rice paper sheet, fold and roll tightly.
- Place rolls seam-side down on the baking sheet and brush tops and bottoms with cooking oil.
- Bake for 20-25 minutes, turning halfway, until golden brown and crispy.
- Remove from the oven and let cool for 5 minutes before serving.
